Using saffron: quantities and method

Saffron is ruined more often by overuse than by underuse. Here are the numbers.

Bloom first. Always.

Saffron is not a dry spice you throw in. Crocin needs liquid and time. Crush the threads lightly between your fingers, soak them in two tablespoons of warm — never boiling — milk or water for fifteen minutes, then add the liquid and the threads to the dish.

Dropping dry threads into a hot pan wastes most of what you bought. Boiling saffron directly destroys safranal, which is the aroma you paid for. Warm, not hot; patient, not quick.

One gram is roughly 450–500 Mongra threads. At biryani quantities, a single gram covers more than twenty large pots.

The three mistakes

Using too much. Past a point saffron turns bitter and medicinal, and the dish tastes of iodine. This is far more common than under-use. If you are unsure, use less; you can always bloom a few more threads.

Adding it too early. In a long-cooked dish, saffron added at the start loses its aroma to evaporation. Add the bloomed liquid in the last few minutes, or layer it on top of biryani rice just before the dum.

Buying powder. Ground saffron is where adulteration hides, because you cannot inspect what you cannot see. Buy threads and crush them yourself when you need to.

Kesar doodh, properly

Bloom 3–4 Mongra threads in two tablespoons of warm milk for fifteen minutes. Meanwhile heat a cup of milk with two crushed green cardamom pods and sugar or honey to taste. Take it off the heat, stir in the bloomed saffron and its liquid, and let it stand two minutes before drinking. Adding the saffron off the heat is the whole trick — the aroma survives.

Saffron rice for biryani

Bloom 15–20 threads in three tablespoons of warm milk. Par-boil the rice as usual. When layering, spoon the saffron milk over the top layer in a few streaks rather than mixing it through — you want marbled white and gold when you open the pot, not uniformly yellow rice. That marbling is how you can see, at the table, that real saffron went in.
